Miso can be used instead of salt to flavour dishes such as soups and stews. It combines well with ingredients such as ginger, garlic, rice vinegar, tahini and citrus zest and juice.
Brown miso is a very strong, dark, and rich miso, used in a variety of dishes. Works well in light soups, dressings, and marinades. Red miso is made from white rice, soybeans, salt, water, and koji culture, and ranges from a reddish brown to deep brown colour. It is fermented for at least 12 months and up to 3 years.
Miso is a rich source of vitamins and minerals, as well as probiotics, known as the gut's "good bacteria." Much of the potential health benefits of miso paste are because of the fermentation process used to make it.
