Mapa Tofu is typically made of tofu simmered in a sauce made with fermented bean paste, chili oil, Sichuan peppercorn, and typically minced beef.

Some say the dish originated in Chengdu, Sichuan as early as 1254, while others say it originated at a Chengdu restaurant in the 1860s. It is also known as "pock-marked Mother Chen's bean curd" after the woman who is said to have first sold it in Chengdu.

Other ingredients can include water chestnuts, onions, wood ear fungus, or ground pork.
